Vegetarian Miso Soup

Miso soup is traditionally made using fish stock, however, it can easily be made with vegetable stock and is just as delicious. You can also make a hearty miso soup by adding more vegetables such as carrots, leeks etc.

Soup Stock or Dashi


Ingredients

Sheet of dried kelp or Konbu (10cm x 10cm)
5-6 shitake mushrooms
1 litre water


Method

Soak the mushrooms in water for at least 1 hour. If you do not have time then boil them once and leave for 10 minutes. Then remove the mushrooms from the stock. (if you wish you can leave them in the soup.)

Make a few slits in the kelp and cook in the mushroom stock on a medium heat. Remove just before boiling.
